Today, we’re making a classic French omelet: tender, pale, and softly folded. Keep everything consistent: the same bowl, the same 8-inch nonstick pan, medium-low heat, and simple seasoning. Ingredients: 3 large eggs, 1 tablespoon butter, a pinch of salt, optional white pepper, and optional chives. First, crack the eggs into a bowl. Add salt and, if you like, a tiny pinch of white pepper. Whisk with a fork until the yolks and whites are fully blended and slightly foamy—no streaks. Set the pan on medium-low. Add the butter and let it melt gently. Swirl to coat the bottom and sides. You want the butter to foam, not brown. Pour in the eggs. Immediately tilt the pan to spread them evenly. With a flexible spatula, stir in small circles, scraping the bottom while you shake the pan lightly. Soft curds will form. When the eggs are mostly set but still glossy on top, stop stirring. Smooth the surface. If you’re adding chives, sprinkle them now. Now shape the omelet. Using the spatula, fold the far edge toward the center. Then nudge and roll the omelet toward the handle, creating a neat cylinder. Turn off the heat. Slide it onto a warm plate, seam-side down. If needed, tuck the ends with the spatula for a clean shape. The goal is creamy inside, not browned outside. Serve right away—simple, soft, and French.
