Think homemade ice cream needs a machine—or hours of complicated work? It doesn’t. Like making lassi, you start with a simple chilled dairy base, then let the freezer do the work. First, chill two cups of whipping cream, then whip it until fluffy and soft peaks form. Add one cup of condensed milk, the thick sweet milk that brings the sugar, plus one teaspoon of vanilla. Now fold everything together gently. Don’t beat it hard, or you’ll lose the air that makes the ice cream light and creamy. Transfer the mixture to an airtight container, cover it, and freeze for at least six to eight hours. It may need longer depending on your freezer. Before serving, leave it out for a few minutes, so scooping is easy. That’s the trick: cold cream, gentle mixing, and enough freezing time—creamy homemade ice cream, without a machine.
